Loaded Lettuce began as a family dream to provide healthy food options in Jackson. Founded by physical therapist Christopher Deans Sr., who witnessed patients suffering from preventable diet-related illnesses over his 30-year career, the restaurant aims to offer nutritious alternatives, particularly in West Jackson where he grew up.The name emerged from a family brainstorming session that considered everything from "Salad Hut" to "Sexy Salad" before landing on "Loaded Lettuce" – reflecting their concept of loading healthy goodness into each meal. Though they started with just 13 toppings in 2022, customers can now choose from 30 different options.

The restaurant maintains its original vision through "Simple" menu options for meatless preferences while offering protein additions like chicken, turkey, ham, and bacon. With the first location at Westland Plaza managed by Richard Deans and a second in Fondren run by Christopher Deans II, they're fulfilling their purpose of providing quick, healthy, affordable meals.
